Instructions
- 1Char eggplant skin over a gas flame or broil until completely collapsed and soft.
- 2Scoop out the smoky flesh, leaving skin behind.
- 3Mash eggplant flesh with tahini, garlic, lemon juice, and olive oil.
- 4Garnish with pomegranate seeds and olive oil.
