Ingredients

  • eggplant
  • tahini paste
  • garlic cloves minced
  • lemon juice
  • olive oil
  • pomegranate seeds

Instructions

  1. 1Char eggplant skin over a gas flame or broil until completely collapsed and soft.
  2. 2Scoop out the smoky flesh, leaving skin behind.
  3. 3Mash eggplant flesh with tahini, garlic, lemon juice, and olive oil.
  4. 4Garnish with pomegranate seeds and olive oil.
