Chocolate Soufflé

A light, airy baked chocolate cake with a melting hot center.

Ingredients

Provided

  • dark chocolate
  • butter
  • eggs separated
  • sugar
  • cream of tartar

Instructions

  1. 1Melt dark chocolate and butter in a double boiler, then cool slightly and whisk in egg yolks.
  2. 2Whip egg whites with sugar and cream of tartar to stiff peaks.
  3. 3Fold one-third of the egg whites into the chocolate mixture, then gently fold in the rest.
  4. 4Pour into greased ramekins coated with sugar.
  5. 5Bake at 375°F (190°C) for 12-15 minutes until risen and firm at edges.
