Chocolate Soufflé

- •eggs separated
- •sugar
- •cream of tartar
Instructions
- 1Melt dark chocolate and butter in a double boiler, then cool slightly and whisk in egg yolks.
- 2Whip egg whites with sugar and cream of tartar to stiff peaks.
- 3Fold one-third of the egg whites into the chocolate mixture, then gently fold in the rest.
- 4Pour into greased ramekins coated with sugar.
- 5Bake at 375°F (190°C) for 12-15 minutes until risen and firm at edges.
