Chilled Andalusian Gazpacho

  • ripe Roma tomatoes
  • cucumber peeled
  • red bell pepper
  • garlic clove
  • extra virgin olive oil
  • sherry vinegar
  • stale white bread slice

Instructions

  1. 1Soak the stale bread in water, squeeze dry.
  2. 2Roughly chop tomatoes, cucumber, and bell pepper.
  3. 3Blend chopped vegetables, garlic, soaked bread, olive oil, and sherry vinegar until smooth.
  4. 4Pass the soup through a sieve for a silky texture.
  5. 5Chill in the refrigerator for at least 2 hours before serving.
