Chicken Udon Noodles

Thick wheat udon noodles served in a hot dashi-soy broth with tender chicken, fish cakes, and scallions.

Ingredients

  • thick udon noodles
  • chicken breast sliced
  • dashi stock
  • soy sauce
  • mirin
  • kamaboko (fish cake) sliced
  • scallions chopped

Instructions

  1. 1Bring dashi stock, soy sauce, and mirin to a simmer in a pot.
  2. 2Add sliced chicken and cook for 5 minutes until tender.
  3. 3Add thick udon noodles and sliced fish cake, cooking for 3 minutes.
  4. 4Ladle hot soup and noodles into large serving bowls.
  5. 5Garnish with chopped scallions and serve immediately.
