Chicken Tikka Masala
Clay-oven style roasted chicken pieces simmered in a spiced tomato-cream curry sauce flavored with dried fenugreek leaves.

- •chicken thighs boneless cubed
- •plain Greek yogurt
- •ginger-garlic paste
- •garam masala
- •kashmiri chili powder
- •canned tomato sauce
- •heavy cream
- •butter
- •dried fenugreek leaves (kasuri methi)
- •fresh cilantro
Instructions
- 1Marinate chicken in yogurt, lemon juice, ginger-garlic paste, and tandoori spices for 2 hours.
- 2Broil chicken in the oven or sear in a hot cast-iron skillet until charred on the edges; set aside.
- 3Sauté onions and ginger-garlic paste in butter. Add spices and tomato sauce, cooking until oil separates.
- 4Stir in heavy cream and return chicken pieces to the sauce. Simmer for 10 minutes.
- 5Crush kasuri methi leaves between your palms and stir into the curry. Garnish with fresh cilantro.
