Chicken Tikka Masala

Clay-oven style roasted chicken pieces simmered in a spiced tomato-cream curry sauce flavored with dried fenugreek leaves.

Ingredients

Provided

  • chicken thighs boneless cubed
  • plain Greek yogurt
  • ginger-garlic paste
  • garam masala
  • kashmiri chili powder
  • canned tomato sauce
  • heavy cream
  • butter
  • dried fenugreek leaves (kasuri methi)
  • fresh cilantro

Instructions

  1. 1Marinate chicken in yogurt, lemon juice, ginger-garlic paste, and tandoori spices for 2 hours.
  2. 2Broil chicken in the oven or sear in a hot cast-iron skillet until charred on the edges; set aside.
  3. 3Sauté onions and ginger-garlic paste in butter. Add spices and tomato sauce, cooking until oil separates.
  4. 4Stir in heavy cream and return chicken pieces to the sauce. Simmer for 10 minutes.
  5. 5Crush kasuri methi leaves between your palms and stir into the curry. Garnish with fresh cilantro.
