Chicken Teriyaki
Pan-seared crispy skin chicken thighs glazed in an authentic, sake-mirin-soy reduction.

- •boneless chicken thighs skin-on
- •soy sauce
- •mirin
- •sake
- •sugar
- •ginger juice
- •sesame seeds
- •steamed short-grain rice
Instructions
- 1Whisk soy sauce, mirin, sake, and sugar in a small pot and simmer until slightly thickened.
- 2Place chicken thighs skin-side down in a cold pan. Heat to medium and render the fat until the skin is golden and crispy.
- 3Flip the chicken and cook until done. Wipe excess fat from the pan.
- 4Pour in the teriyaki glaze, basting the chicken over low heat until the sauce coats it completely.
- 5Slice the chicken, sprinkle with toasted sesame seeds, and serve over rice.
