Chicken Teriyaki

Pan-seared crispy skin chicken thighs glazed in an authentic, sake-mirin-soy reduction.

Ingredients

  • boneless chicken thighs skin-on
  • soy sauce
  • mirin
  • sake
  • sugar
  • ginger juice
  • sesame seeds
  • steamed short-grain rice

Instructions

  1. 1Whisk soy sauce, mirin, sake, and sugar in a small pot and simmer until slightly thickened.
  2. 2Place chicken thighs skin-side down in a cold pan. Heat to medium and render the fat until the skin is golden and crispy.
  3. 3Flip the chicken and cook until done. Wipe excess fat from the pan.
  4. 4Pour in the teriyaki glaze, basting the chicken over low heat until the sauce coats it completely.
  5. 5Slice the chicken, sprinkle with toasted sesame seeds, and serve over rice.
