  • chicken breasts cut in half
  • all-purpose flour
  • eggs beaten
  • breadcrumbs
  • butter
  • lemon wedges

Instructions

  1. 1Pound chicken cutlets between plastic wrap until 1/4-inch thin.
  2. 2Dredge in flour, dip in egg wash, and coat thoroughly with breadcrumbs.
  3. 3Melt butter and oil in a large skillet over medium-high heat.
  4. 4Pan-fry the cutlets for 3-4 minutes per side, swirling the pan, until golden brown.
  5. 5Drain and serve hot with fresh lemon wedges.
