Chicken Karaage (Fried Chicken)
Crispy, double-fried Japanese chicken nuggets marinated in soy sauce, sake, ginger, and garlic.

- •soy sauce
- •sake
- •ginger grated
- •garlic grated
- •potato starch
- •frying oil
Instructions
- 1Marinate chicken cubes in soy sauce, sake, ginger, and garlic for 30 minutes.
- 2Coat marinated chicken pieces thoroughly with potato starch.
- 3Deep fry in hot oil (325°F/160°C) for 3 minutes, then remove and rest for 3 minutes.
- 4Deep fry a second time at a higher heat (375°F/190°C) for 1 minute until crisp and golden brown.
- 5Drain and serve hot with lemon wedges.
