Chicken Karaage (Fried Chicken)

Crispy, double-fried Japanese chicken nuggets marinated in soy sauce, sake, ginger, and garlic.

Ingredients

  • chicken thighs boneless cubed
  • soy sauce
  • sake
  • ginger grated
  • garlic grated
  • potato starch
  • frying oil

Instructions

  1. 1Marinate chicken cubes in soy sauce, sake, ginger, and garlic for 30 minutes.
  2. 2Coat marinated chicken pieces thoroughly with potato starch.
  3. 3Deep fry in hot oil (325°F/160°C) for 3 minutes, then remove and rest for 3 minutes.
  4. 4Deep fry a second time at a higher heat (375°F/190°C) for 1 minute until crisp and golden brown.
  5. 5Drain and serve hot with lemon wedges.
