Chicken Biryani
An aromatic, layered rice dish cooked with marinated chicken, saffron, ghee, and fragrant whole spices.

- •basmati rice
- •chicken thigh pieces
- •plain yogurt
- •sliced onions fried golden (birista)
- •saffron threads soaked in milk
- •ghee (clarified butter)
- •garam masala
- •ginger-garlic paste
- •green cardamom, cloves, cinnamon stick
Instructions
- 1Marinate chicken in yogurt, garam masala, ginger-garlic paste, and salt for 1 hour.
- 2Parboil basmati rice with whole spices (cinnamon, cardamom, cloves) until 70% cooked, then drain.
- 3Cook the marinated chicken in ghee in a heavy pot until 80% cooked.
- 4Layer the parboiled rice over the cooked chicken. Top with fried onions, chopped mint, cilantro, and saffron milk.
- 5Seal the pot lid with dough or foil (dum cooking) and simmer on low heat for 20 minutes to allow aromas to blend.
- 6Gently fluff the layered rice and serve hot.
