Chicken Biryani

An aromatic, layered rice dish cooked with marinated chicken, saffron, ghee, and fragrant whole spices.

Ingredients

Provided

  • basmati rice
  • chicken thigh pieces
  • plain yogurt
  • sliced onions fried golden (birista)
  • saffron threads soaked in milk
  • ghee (clarified butter)
  • garam masala
  • ginger-garlic paste
  • green cardamom, cloves, cinnamon stick

Instructions

  1. 1Marinate chicken in yogurt, garam masala, ginger-garlic paste, and salt for 1 hour.
  2. 2Parboil basmati rice with whole spices (cinnamon, cardamom, cloves) until 70% cooked, then drain.
  3. 3Cook the marinated chicken in ghee in a heavy pot until 80% cooked.
  4. 4Layer the parboiled rice over the cooked chicken. Top with fried onions, chopped mint, cilantro, and saffron milk.
  5. 5Seal the pot lid with dough or foil (dum cooking) and simmer on low heat for 20 minutes to allow aromas to blend.
  6. 6Gently fluff the layered rice and serve hot.
