Cheese Quesadillas

Toasted flour tortillas filled with melting Oaxacan cheese, griddled with butter until crispy and golden.

Ingredients

Provided

  • artisanal flour tortillas
  • Queso Oaxaca or Monterey Jack shredded
  • epazote leaves or fresh cilantro
  • salted butter
  • fresh salsa verde and pico de gallo for serving

Instructions

  1. 1Heat a heavy cast-iron skillet or comal over medium heat.
  2. 2Lightly butter one side of the tortillas.
  3. 3Place tortilla butter-side down on the skillet and layer one half with Oaxacan cheese and epazote.
  4. 4Fold the tortilla in half over the cheese.
  5. 5Griddle for 3-4 minutes per side, pressing gently, until the tortilla is crispy and cheese is completely melted.
  6. 6Slice into wedges and serve immediately with fresh salsa verde.
