Chana Masala
Tangy and spicy chickpea curry simmered with tea-infused chickpeas, onions, tomatoes, and dry mango powder.

- •canned chickpeas
- •onions finely chopped
- •canned crushed tomatoes
- •ginger-garlic paste
- •amchur (dry mango powder)
- •garam masala
- •turmeric
- •fresh cilantro
- •lime
Instructions
- 1Sauté onions in oil until caramelized and deep brown.
- 2Add ginger-garlic paste and cook for 1 minute.
- 3Add tomatoes, turmeric, garam masala, chili powder, and amchur. Cook until the mixture forms a paste.
- 4Add chickpeas and a cup of water, cover, and simmer for 15 minutes.
- 5Mash a few chickpeas to thicken the gravy, stir in lime juice, and garnish with fresh cilantro.
