Chana Masala

Tangy and spicy chickpea curry simmered with tea-infused chickpeas, onions, tomatoes, and dry mango powder.

Ingredients

  • canned chickpeas
  • onions finely chopped
  • canned crushed tomatoes
  • ginger-garlic paste
  • amchur (dry mango powder)
  • garam masala
  • turmeric
  • fresh cilantro
  • lime

Instructions

  1. 1Sauté onions in oil until caramelized and deep brown.
  2. 2Add ginger-garlic paste and cook for 1 minute.
  3. 3Add tomatoes, turmeric, garam masala, chili powder, and amchur. Cook until the mixture forms a paste.
  4. 4Add chickpeas and a cup of water, cover, and simmer for 15 minutes.
  5. 5Mash a few chickpeas to thicken the gravy, stir in lime juice, and garnish with fresh cilantro.
