Cantonese Egg Tarts

Flaky pastry shells filled with a sweet, rich egg custard center.

Ingredients

  • puff pastry sheet
  • eggs
  • sugar
  • hot water
  • evaporated milk
  • vanilla extract

Instructions

  1. 1Cut puff pastry into circles and press into tart molds.
  2. 2Whisk hot water and sugar until dissolved, then cool.
  3. 3Whisk eggs, evaporated milk, vanilla, and sugar water together.
  4. 4Strain egg mixture and pour into the pastry shells.
  5. 5Bake at 375°F (190°C) for 20 minutes until custard is set.
