Beef Wellington

Tender beef tenderloin wrapped in mushroom duxelles, prosciutto, and puff pastry, baked golden brown.

Ingredients

Provided

  • beef tenderloin fillet
  • wild mushrooms chopped
  • prosciutto ham slices
  • puff pastry sheet
  • egg wash
  • English mustard

Instructions

  1. 1Sear beef fillet on all sides in a hot pan; brush with English mustard and cool.
  2. 2Sauté chopped mushrooms to paste (duxelles) until completely dry.
  3. 3Lay plastic wrap, arrange prosciutto, spread mushroom duxelles, and roll tightly around the beef. Chill for 15 minutes.
  4. 4Roll the beef inside puff pastry, brush with egg wash, score pattern on top.
  5. 5Bake at 400°F (200°C) for 30-35 minutes until pastry is golden.
