Beef Fajitas
Sizzling strips of lime-marinated skirt steak seared with charred bell peppers and sweet onions.

- •skirt steak trimmed
- •bell peppers (red and green) sliced
- •yellow onion sliced
- •lime juice
- •chili powder and ground cumin
- •garlic powder
- •olive oil
- •flour tortillas warmed
Instructions
- 1Marinate steak in lime juice, cumin, chili powder, garlic powder, and olive oil for 30 minutes.
- 2Sear the steak in a very hot cast-iron skillet for 3-4 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
- 3In the same skillet, cook sliced peppers and onions in the pan drippings until tender-crisp and charred.
- 4Return sliced beef to the skillet and toss with vegetables.
- 5Serve hot with warm flour tortillas and guacamole.
