Beef Fajitas

Sizzling strips of lime-marinated skirt steak seared with charred bell peppers and sweet onions.

Ingredients

Provided

  • skirt steak trimmed
  • bell peppers (red and green) sliced
  • yellow onion sliced
  • lime juice
  • chili powder and ground cumin
  • garlic powder
  • olive oil
  • flour tortillas warmed

Instructions

  1. 1Marinate steak in lime juice, cumin, chili powder, garlic powder, and olive oil for 30 minutes.
  2. 2Sear the steak in a very hot cast-iron skillet for 3-4 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
  3. 3In the same skillet, cook sliced peppers and onions in the pan drippings until tender-crisp and charred.
  4. 4Return sliced beef to the skillet and toss with vegetables.
  5. 5Serve hot with warm flour tortillas and guacamole.
