Baked Eggplant Rollatini
Thinly sliced eggplant rolled with seasoned ricotta and baked in marinara sauce.

- •eggplant sliced thin
- •ricotta cheese
- •egg
- •Parmesan cheese
- •mozzarella cheese
- •marinara sauce
- •fresh basil
- •garlic powder
Instructions
- 1Salt eggplant slices and let sit for 15 minutes to draw out water. Pat dry and bake at 400°F for 10 minutes to soften.
- 2Mix ricotta, egg, Parmesan, garlic powder, and chopped basil in a bowl.
- 3Spread ricotta mixture onto each eggplant slice and roll up tightly.
- 4Place rolls seam-side down in a baking dish over a layer of marinara sauce.
- 5Top with remaining marinara and mozzarella. Bake at 375°F (190°C) for 15 minutes until cheese melts.
