Baked Eggplant Rollatini

Thinly sliced eggplant rolled with seasoned ricotta and baked in marinara sauce.

Ingredients

  • eggplant sliced thin
  • ricotta cheese
  • egg
  • Parmesan cheese
  • mozzarella cheese
  • marinara sauce
  • fresh basil
  • garlic powder

Instructions

  1. 1Salt eggplant slices and let sit for 15 minutes to draw out water. Pat dry and bake at 400°F for 10 minutes to soften.
  2. 2Mix ricotta, egg, Parmesan, garlic powder, and chopped basil in a bowl.
  3. 3Spread ricotta mixture onto each eggplant slice and roll up tightly.
  4. 4Place rolls seam-side down in a baking dish over a layer of marinara sauce.
  5. 5Top with remaining marinara and mozzarella. Bake at 375°F (190°C) for 15 minutes until cheese melts.
