Aloo Gobi

- •cauliflower florets
- •potatoes peeled and cubed
- •onion chopped
- •ginger-garlic paste
- •turmeric powder
- •coriander powder
- •cumin seeds
- •amchur (mango powder)
- •fresh cilantro
Instructions
- 1Heat oil in a pan, add cumin seeds, and let sizzle.
- 2Sauté onion and ginger-garlic paste until golden.
- 3Add potatoes, cauliflower, turmeric, coriander, and salt. Toss well to coat.
- 4Cover and cook on low heat for 15-20 minutes, stirring occasionally, until vegetables are tender.
- 5Sprinkle with garam masala and amchur, garnish with fresh cilantro, and serve.
