Aloo Gobi

A popular vegetarian dry dish made with potatoes, cauliflower, and Indian spices.

Ingredients

  • cauliflower florets
  • potatoes peeled and cubed
  • onion chopped
  • ginger-garlic paste
  • turmeric powder
  • coriander powder
  • cumin seeds
  • amchur (mango powder)
  • fresh cilantro

Instructions

  1. 1Heat oil in a pan, add cumin seeds, and let sizzle.
  2. 2Sauté onion and ginger-garlic paste until golden.
  3. 3Add potatoes, cauliflower, turmeric, coriander, and salt. Toss well to coat.
  4. 4Cover and cook on low heat for 15-20 minutes, stirring occasionally, until vegetables are tender.
  5. 5Sprinkle with garam masala and amchur, garnish with fresh cilantro, and serve.
